传统西点主要包括:蛋糕、面包和点心三大类。包括慕司——是英文MOUSSE的译音,又译成木司、莫司、毛士等。是将鸡蛋、奶油分别打发充气后,与其它调味品调合而成或将打发的奶油拌入馅料和明胶水制成的松软形甜食。 泡芙——是英文PUFF的译音,又译成卜乎,也称空心饼、气鼓等。是以水或牛奶加黄油煮沸后烫制面粉,再搅入鸡蛋,通过挤糊、烘烤、填馅料等工艺而制成的一类点心。 曲奇——是英文COOKITS的译音。是以黄油、面粉加糖等主料经搅拌、挤制、烘烤而成的一种酥松的饼干。 布丁——是英文PUDDING的译音。是以黄油、鸡蛋、白糖、牛奶等为主要原料,配以各种辅料,通过蒸或烤制而成的一类柔软的点心。 派——是英文PIE的译音,又译成排、批等。是一种油酥面饼,内含水果或馅料,常用原形模具做坯模。按口味分有甜咸两种,按外形分有单层皮派和双层皮派。 挞——是英文TART的译音,又译成塔。是以油酥面团为坯料,借助模具,通过制坯、烘烤、装饰等工艺而制成的内盛水果或馅料的一类较小型的点心,其形状可因模具的变化而变化。 沙勿来——是英文SOUFFLE的译音,又译成苏夫利、梳乎厘等。有冷食和热食两种。热的以蛋白为主,冷的以蛋黄和奶油为主要原料,是一种充气量大,口感松软的点心。 巴非——是英文PARFAIR的译音。它是一种以鸡蛋和奶油为主要原料的冷冻甜食。 果冻——是用糖、水和啫喱粉,按一定的比例调制而成的冷冻甜食。
