我们去不了有麋鹿的圣诞村,但可以在自家的饭桌上,建一个小小的童话。那里有礼物、有飞雪、还有永远陪伴你的人。圣诞快乐。用料 鸡蛋 6个玉米油 30g牛奶 60g低筋面粉 60g可可粉 55g柠檬汁 少许白砂糖 110g巧克力碎 250g淡奶油 350g【圣诞树桩蛋糕】的做法 戚风蛋糕胚:(以下为一个戚风胚的用量,该蛋糕需要两个戚风胚。)将3个鸡蛋的蛋清和蛋黄分离,分别倒入无水无油的干净容器中。3颗蛋黄中加入15g玉米油、30g牛奶,用蛋抽打发至完全融合。*分蛋的时候注意蛋壳不要戳破蛋黄,蛋清里面不要掺到蛋黄,否则会影响之后打发。步骤1筛入30g低筋面粉和15g可可粉,用蛋抽呈Z字形搅拌成光滑无颗粒状的面糊,蛋黄糊完成。步骤2蛋清中挤入少许柠檬汁,分3次加入35g白砂糖,打发至中性发泡状态(提起打蛋器有软尖角),蛋白霜完成。步骤3蛋白霜分2次加入蛋黄糊中翻拌均匀,翻拌时注意顺着一个方向轻轻搅动,戚风蛋糕糊完成。*这一步非常关键,一定要尽量轻,不能用力快速搅,也不能搅拌次数过多,否则蛋白霜消泡会影响蛋糕的蓬发。步骤4将28x28cm大小方形烤盘中铺上烘培纸,倒入蛋糕糊,用刮片把面糊表面刮平并轻震出气泡。步骤5放入预热至上火175度,下火165度的烤箱中烤12分钟。取出烤好的蛋糕胚,上面先盖层油纸,再倒扣放凉,戚风蛋糕胚完成。步骤6巧克力脆片:取250g巧克力碎,隔水加热至融化。步骤7将融化好的巧克力液倒在烘培纸上,用刮片抹匀,稍微晾干用叉子划上树桩的纹理,自然凝固3~5分钟。步骤8凝固好的巧克力片用手掰成一片一片的树皮形状备用。步骤9蛋糕组装:350g淡奶油、25g可可粉、40g白砂糖用打蛋器打至8成看起来比较硬的状态。*打之前先手动搅匀,避免飞粉。步骤10把放凉的两块蛋糕胚对半切开,得到四块大小一致的长方形蛋糕胚。用锯齿刀斜切两端较短的蛋糕条。步骤11取三块蛋糕胚(多出一块可以吃掉),均匀抹上约3mm厚的奶油。步骤12先卷起一块,卷完放在第二块的一端,继续卷。总共卷三次。步骤13两侧修平,放入盘中。步骤14蛋糕外圈抹上一层奶油,将巧克力树皮贴上,小做修整。 步骤15装饰适量的迷迭香、醋栗果和榛子,撒上糖粉。

看楼的解释莫名其妙。主要来说就是做法和形成的松软度不同。海绵蛋糕是不分蛋的,整个鸡蛋打发;戚风是分蛋的,蛋黄和蛋清要分开,主要打发蛋清。一般生日蛋糕或蛋糕店卖的蛋糕都是戚风。戚风比海绵松软好吃,但是难度大不少。还真不清楚他们的区别是不是植物油和动物油,因为我看过的所有海绵的方子都是放植物油的。一般都是面包用黄油而蛋糕用无味植物油。生日蛋糕必须戚风。

ingredient: Five eggs, cake flour 90g, castor sugar 80g, milk 50ml, butter 20ml
材料:鸡蛋5个,低筋面粉90克,细砂糖80克,纯牛奶50ml,黄油20ml
1、Make sure you have every ingredient on hand before you begin. At first,we should separate egg white from the yolk.
开始时要准备好所有材料。首先,需要将蛋清和蛋黄分离。
2、Whipping egg white and add suger 50g three times.
打发蛋清,同时分3次加细砂糖,最多加到50g。
3、Whipping yolk and add suger 30g,and add butter 20ml ,mix well.
打蛋黄,一次性加糖30g,打匀后加油50g,打匀。
4、 Add milk 50g,mix well.
再加牛奶50g,打匀。
5、Combine the yolk and flour mixture,mix well by hand. Add the egg white three times, Mix them together to a thick flour paste.
将打好的蛋黄液倒入面粉盆内,手动打匀后,将打发好的蛋清分三次加到面盆内,搅拌形成浓稠的蛋糕面糊。
6、Preheat your oven to the required temperature from the recipe.Once all ingredients are added and the batter is fully mixed,pour it evenly into your prepared pans and cups and set them in the preheated oven to bake.Only fill pans 2/3 of the way full as the cake will rise during baking.
将你的烤箱事先预热。所有材料搅拌好之后,将其倒入事先准备好的圆形蛋糕盘和蛋糕杯中,装到2/3满即可,放入烤箱中准备烘烤。
7、Close the oven door,set your timer to 10 minites 160 degrees.Resist the urge to open the oven door – heat will escape and may cause the cake to fall.Once the timer goes off, put it back in down floor of the oven for another 30 minutes 165 degrees.Remove the cake from the oven and place the pto cool for 15-30 minutes.
关上烤箱门,先开启烤箱,165度预热10分钟。在烘烤的过程中,千万不要随意打开烤箱门,以免热量流失温度降低。预热完毕后,再把蛋糕放入烤箱的下层,上下火烘烤模式,165度,30分钟。
蛋糕做好后,从烤箱取出,放在盘子上冷却15-30分钟。

1、Gather your ingredients. Pound cake is one of the simplest cakes to bake. Here's what you'll need:
1 cup (225 g) of unsalted butter, softened,1 cup (225 g) of granulated sugar,A pinch of salt,2 teaspoons (9.9 mL) of vanilla extract,5 eggs, room temperature
2 cups (240 g) of cake flour (or, you can use 2 cups minus 2 Tbsp (234 g) of all-purpose flour plus 2 Tbsp (16 g) of cornstarch).
2、Preheat the oven to 325 °F (163 °C) and grease and flour a cake pan. Pound cakes are best baked in deep pans, such as loaf pans or bundt pans.
Use butter or shortening to grease the pan. Then, sprinkle a light layer of flour into the pan, rotate the pan until it’s evenly coated, then tap out the excess flour.
3、Cream the butter and sugar. Place the butter and sugar in a mixing bowl and beat them together until the mixture is light, fluffy and creamy.
4、Add the eggs and vanilla. For best results, add the eggs one at a time and beat the mixture in between.Keep beating the mixture until the eggs are completely incorporated.
5、Stir in the cake flour. Keep the electric mixer on low or use a wooden spoon to stir the flour in a bit at a time until it's just incorporated. Be careful not to overmix it.
6、Pour the batter into the pan. Use a spatula to scrape down the sides of the bowl.
7、Bake the cake for 1 hour 15 minutes. Rotate the pan 180 degrees halfway through the cook time to ensure it bakes evenly.
The cake is finished when a toothpick inserted in the center comes out clean. Enjoy your delicious homemade cake!
