花蜜的英文为：nectar，honey，Flower Honey，flower-nectar。
花蜜是一种纯粹的植物分泌物，但它是由花内或花外蜜腺分泌的。花蜜来自蜜腺，而蜜腺分泌的花蜜却来自植物韧皮部的筛管，筛管把汁液运送到蜜腺的特化薄壁组织中，经过细胞内酶的活动，使汁液的化学成分发生了一系列的化学变化而成为花蜜。
花蜜是由位于花内或花外组织中的蜜腺分泌出来的，其中花内蜜腺是最常见的蜜腺类型。花蜜是植物提供给访花者的报酬，也是影响访花者访花行为的重要性状。蜜蜂采集花蜜用来酿制成蜂蜜。
花蜜中含有糖类、氨基酸、蛋白质、无机离子、脂类、酚类、生物碱以及萜类等化学成分，但总体上可以看作是糖类的水溶液。花蜜成分随蜜源植物种类而不同。
花蜜中糖的浓度比韧皮部和木质部及植物中汁液的含量高。花蜜的含糖量随着植物的种类、天气、小气候及土壤的湿度等的变化而变化着。含水量一般为30%-70%，糖类物质9%-60%，其它各种物质1%-2%。糖类物质中蔗糖占三分之一，转化糖占三分之二。
