韩国泡菜是最具韩国代表性的传统料理之一,也是典型的发酵食品。位处高纬度的韩国由于冬天很长,气候很冷,蔬菜生长的季节较短,每年冬天,韩国家庭主妇必须为家人准备过冬食品。秋天时将白菜、黄瓜和萝卜等蔬菜加以腌制,因此冬天时家家户户都有各种各样的泡菜。
