红烧肉是一道著名的大众菜肴,属于热菜。其以五花肉为制作主料,最好选用肥瘦相间的三层肉(五花肉)来做,做法多达二三十种。

红烧肉的烹饪技巧,锅具以砂锅为主,做出来的肉肥瘦相间,香甜松软,入口即化。红烧肉在我国各地流传甚广,具有一定的营养价值 。

红烧肉的做法各地也会稍有不同。南方习惯用酱油(老抽)调色,而北方则偏爱炒糖色儿。

原料一般选用上好五花肉(所谓上好五花肉要层次分明,一般五层左右为佳,故名“五花肉”),或者“坐臀肉”(即后臀尖)。可放入白菜、豆腐、土豆、胡萝卜等蔬菜一起煮炖,能变化出多种好吃的炖肉菜。

炖肉时最好用冰糖,比白糖做出来的颜色要亮,好看,而且口感也更好。
