Today people in the UK eat a more varied diet than ever before. As well as the regionaldiets of England, Scotland, Wales, and Northern Ireland the many immigrant communities haveintroduced their cuisines to the previously unadventurous Britons: Chinese, Greek, Indian,Italian, Thai, American fast foods such as pizza, hamburgers and fried chicken have to someextent displaced the traditional fast food of fish and chips. Because of the climate and the Germanic origins of many of its early people, the UK hasbeen a traditionally beer drinking rather than a wine drinking country. Nevertheless, in recentyears, vineyards in the south of England have proved successful. In the west of England thetraditional drink is cider, rather than beer. Over Britain as a whole, however, the traditionaldrink is tea. The most famous meal in Britain could be the traditional breakfast. What makes it sopopular with British people and visitors alike? Accounts of its origins vary. Drinking a blend of black teas for breakfast is indeed alongstanding British custom. The practice of referring to such a blend as "English breakfasttea" appears to have originated not in England but America, as far back as Colonial times. English Breakfast tea is a black tea blend usually described as full-bodied, robust, and/orrich, and blended to go well with milk and sugar, in a style traditionally associated with a heartyEnglish breakfast. It is the most common style of tea in Britain. At a local supermarket, two women push half-filled grocery carts. The ladies are good friends, but they couldn't be more different. One is a stay-at-home housewife who loves to createculinary masterpieces from scratch. The other is a training supervisor at a prestigiousadvertising agency. Household chores, particularly those in the kitchen, are not her idea of fun.The two ladies stop for a moment in the frozen foods section. "I'm so tired," sighs theprofessional woman. "I don't know what to do about supper." Her friend suggests, "Whatabout a microwave dinner?" The weary professional sighs, "No, I don't feel like cookingtonight." If you think American cooking means opening a package and tossing the contents into themicrowave, think again. On the one hand, it's true that Americans thrive on cold cereal forbreakfast, sandwiches for lunch and instant dinners. On the other hand, many Americansrecognize the value of cooking skills. Most Americans will admit that there's nothing betterthan a good home-cooked meal. But with cooking, as with any other skill, good results don'thappen by accident. For those who need guidance in their cooking, or for those who have just run out of ideas, recipes are lifesavers. Recipes list all the ingredients for a dish (generally in the order used), theamount of each to use, and a description of how to put them together. Finding recipes inAmerica is as easy as pie.Friends often augment their recipe collection by passing aroundtheir favorites written on cards. For experienced cooks, true artists that they are, recipes are merely reference points. Theyoften make adjustments as they go along, depending on the quantity of people they need toserve, the ingredients they have available and their personal taste. Some cooks use recipesvery little, preferring instead to depend on their intuition as they add a pinch of this and adash of that to create just the right flavors. Of course, Americans don't have a corner on the market when it comes to good cooking.Wherever you go in the world, people love to eat. As a result, every culture and nationality hasits own share of mouth-watering delicacies. But whatever the dialect, cooking is a languageeveryone understands. Tangerines and Oranges Displaying and eating these fruits is said to bring wealth and luck. According to the Chinese Culture Center of San Francisco, the tradition stems from the way the Chinese words for gold and orange sound alike, while the word for tangerine echoes luck. "It's good if they have leaves," adds Lum, "because leaves symbolize longevity." But don't group them in fours, because, Dunlop says, this number is associated with death. Long Noodles If noodles are served, then "keep them as long as possible for long life," says Lum. The Tray of Togetherness Put out for visiting relatives to snack on, or given as a gift, the eight ("a traditionally symboliclucky number," explains Dunlop) compartments of the tray are filled with things such as preserved kumquats for prosperity, coconut for togetherness, longans to bring many sons, and red melon seeds for happiness. Nian Gao "Nian gao means year cake, but gao sounds the same as the word for tall or high," says Dunlop. Hence the cakes symbolize achieving new heights in the coming year. The steamed sweets are made of glutinous rice flour, brown sugar, and oil. Some versions have white sesame seeds, red dates, or nuts in them (the dates are said to bring "early prosperity," writes Gong in Good Luck Life). If you want to try your hand at making nian gao, here's our recipe. Chowhounds also have some tips. Pomelo This large citrus fruit is popular, writes Gong, because it is thought to bring "continuous prosperity and status." The tradition comes from the way the Cantonese phrase for pomelo sounds similar to the words for prosperity and status, explains Lum. Jai This vegetarian dish is eaten because it's "part of the Buddhist culture to cleanseyourself with vegetables," says Lum. It's also packed with good-luck foods, writes Gong, breaking it down by ingredient: sea moss for prosperity; lotus seeds for children/birth of sons; noodles for longevity; lily buds to "send 100 years of harmonious union"; Chinese black mushrooms to "fulfill wishes from east to west"; and more. Try our recipe. Long Leafy Greens and Long Beans Gong writes that leafy greens, such as Chinese broccoli, are "served whole to wish a long life for parents." Whole Fish The Chinese word for fish sounds like the word for abundance, says Lum. It's important that the fish is served with the head and tail intact, writes Gong, "to ensure a good start and finish and to avoid bad luck throughout the year." Sweets Serving desserts brings a sweet life in the new year. Gong writes that a childhood favorite was the flaky cookie pockets called gok jai, filled with peanuts, coconut, and sesame. Yuanbao (Jiaozi) "In North China, everyone eats the jiaozi dumplings," says Dunlop. "Families will make adough and wrap it around pork and cabbage, and boil [the dumplings], then serve them with vinegar and soy sauce. You can wrap them in the shape of an old silver ingot." Gong writes that during New Year celebrations jiaozi are called yuanbao, a reference to the ancient, ingot-shaped Chinese currency, and that eating them is said to bring prosperity. While making them, families sometimes tuck added good-luck foods like peanuts (to bring long life) into some of them.

Eating Custom and Practice American eating is funny. They eat almost everything with a fork, and it appears that holding a knife in one's right hand longer than a few seconds is considered to be against good table manners. The system is that if it is absolutely necessary to use a knife, people take the fork in their left hand, and cut off a piece of meat or whatever it is in the normal manner. Then they put the knife down, transfer the fork to their right hand, and only then do they transport the food to their mouth. This is clearly ludicrous(滑稽可笑), but it is considered good manners. There are several results of this system. First, if it is not absolutely necessary to use a knife, Americans don't use one, because obviously this greatly complicates(使复杂化) things, and you will therefore see them trying to cut things like potatoes, fish and even bacon(熏猪肉) with a fork. Second, towards the end of a course, since only one implement(器具) is being used, food has to do chased around the plate with the fork - and for the last mouthful the thumb has to be used to keep the food in place, although one is not supposed to do this. Third, tables are generally laid with one knife and two forks, the outside fork being for the salad. There is no need for foreign visitors to follow the American system and try to eat the salad with only a fork, but if you do use your knife, remember to save it for the meat course. Even desserts(甜食) (except ice cream) are eaten with a fork if at all possible, and the spoon you see by your dessert is meant to be for coffee (but if you use it for your dessert no one will say anything).
