Slightly Fried Dumpling with Pork Ingredients: 500 grams (1.1 lb) wheat flour 250 grams (0.55 lb) minced pork 5 grams (5/6 tsp) salt 5 grams (1 tsp) sugar 5 grams (1 1/4 tsp) MSG 10 grams (1 1/2 tsp) soy sauce 15 grams (1 tbsp) cooking wine 5 grams (1/6 oz) finely cut scallions 5 grams (1/6 oz) chopped ginger 150 grams (12 tbsp) cooking oil Directions: 1. Mix the minced pork well with the salt, sugar, MSG, soy sauce, cooking wine, scallions and ginger. Add 50 g (3 tbsp) of water and stir in one direction till you feel the sense of elasticity. 2. Mix the flour with 200 g (2/5 cup) of boiling water, make the dough into long and round shape and reduce to 40 pieces. Press and roll into wrappings each about 6 centimeters (2.4 inches) in diameter. Put in the filling, fold and wrap into crescent shapes. 3. Put the cooking oil into the frying pan, heat and when the oil is about 135-200�0�2C (275-390�0�2F), place the raw dumplings in. Heat for one minute, sprinkle 100 g (6 tbsp) of water and put on the pan cover. Use strong fire to heat five minutes. When the water disappears, the dumplings are ready. (It may take several repetitions to cook all the 40 dumplings because of the size of the pan.) Features: Beautiful to look at and delicious to eat. Taste: Salty and tasty. FRIED POTATOES 3-4 potatoes1/4 cup oil, approximately1 onion, chopped2 cloves garlic, chopped1/2 pound fresh mushrooms, unsliced (sliced, canned mushrooms can be substituted, if need be)1/4 cup hulled sunflower seedssalt and pepperHeat oil, add potatoes that have been washed and thinly sliced. Cook for 10-15 minutes, then add mushrooms, onions, garlic, and sunflower seeds. Salt and pepper to taste. This is the closest I could come to making them. Stir until almost cooked. Add in chopped ginger, onion and pickled chilli until fragrant. Add in black fungus, bell pepper and carrots. Pour in the prepared sauce. To enjoy the famous duck, the restaurant Quan Ju De is the best choice for you. It has multiple outlets in Peking (Beijing). The old restaurant first opened in 1860. The duck here is said to be the best in Peking, and the service is very good as well.Before you take up the menu, you might want to know more about how Peking Roasted Duck is made and how it is served. The ducks are raised for the sole purpose of making the food. Force-fed, they are kept in cages which restrain them from moving about, so as to fatten them up and make the meat comparably tender. Peking Roasted Duck is processed in several steps: first the ducks are rubbed with spices, salt and sugar, and then kept hung in the air for some time. Then the ducks are roasted in an oven, or hung over the fire till they become brown with rich grease perspiring outside and have a nice odor.Peking Duck is always served in well-cut slices. The whole duck must be sliced into 120 pieces and every piece has to be perfect with the complete layers of the meat. 同感!要准确翻译出来的确不容易,但问题是即使翻译出正式的名字,老外也不一定懂。比如:蔬菜名(我几乎说不上来几个),但在中国吃得到的蔬菜在国外不一定有,他们也不知道这些名字,听起来就会像一些专业术语。其实告诉他们就是本地的蔬菜就可以了,反过来可以问他们那里是否有类似的蔬菜,顺便学一下怎么说。肉类,这个不用我说,只要不跟阿拉伯人提pork,不跟印度人提beef,更不要告诉所有西方老外他们吃了dog meat,frog等等就可以了。水产品,老外常吃海鱼,根本不知道怎么吃带小刺的河鱼,可以说是river fish,fish living in the fresh water。其它的shrimp等他们都认识了。我知道你想知道的是菜肴的名称,而不仅仅是什么原料。其实这东西太高深了,他们根本不会懂,所以根本不需要找正式的名称,告诉他们主要的烹饪方式就足够了:fried(炒的,炸的),stewed(煮的,炖的,烧的),baked(烤的),salted(腌的)……别忘了再加上口味:spicy/hot,sweet,salty,sour,bitter ……
