小笼包,别称小笼馒头,在苏南、上海、浙江一带习惯叫做小笼馒头,四川叫做小笼包子,武汉叫做蒸包,一个蒸笼里有10个包子,10个包子为一笼,它源于北宋京城开封的灌汤包,南宋时在江南承传、发展和演变而成。小笼包是常州、无锡、苏州、上海、南京、杭州、宁波、嘉兴、芜湖、徽州、嵊州等江南地区著名的传统小吃。清代道光年间,在今江苏常州出现了现代形式的小笼包,并在各地都形成了各自的特色,如常州味鲜,无锡味甜,苏州味美,但都具有皮薄卤足、鲜香美味等共同特点,并在开封、天津等地也得到了传扬。而诞生于清末同治十年的上海南翔小笼同样历史悠久,享誉中外。中文名小笼包英文名small steamed bun主要食材猪肉,素菜,白糖,面粉分类面点,小吃 ,早点,苏菜口味皮薄馅大、汁多味美、肉香四溢历史文化小笼包的历史可上溯至北宋,尚有类似的“灌汤包子”流传至今。小笼包现代形式的小笼包起源于清代道光年间的常州府,并在各地都形成了各自的特色,如常州味鲜,无锡味甜,苏州味美,但都具有皮薄卤足、鲜香美味等共同特点,并在开封、天津等地也得到了传扬。近代江南小笼包真正成形的历史已很难考证,但普遍认为现代小笼包与北宋时期的“山洞梅花包”和“灌汤包子”有着传承上的渊源关系,在靖康之变后由北宋皇室南迁时带入江南后演变而来,与中国北方地区流行的灌汤包子系出同门,千百年来传承一直没有断绝,并在各地得到了创新和发扬。常州万华茶楼在清代道光年间的“加蟹小笼馒头”,上海南翔镇的黄明贤在1871年创制的“南翔小笼馒头”,包括清代光绪年间流行于无锡惠山秦园一带的无锡民间小笼馒头,及开封、天津等地近代创制的小笼包,都各具特色。江南一带的常州、无锡、苏州、上海、南京、杭州、芜湖等地都有着悠久的小笼包烹饪历史,现存着不少以小笼包为特色的百年老店。自50多年前有中国移民在西班牙经营中国餐馆开始,中国的小笼包也开始在西班牙食客中享有盛誉。西班牙语菜单上的解释是:“中心加肉的中国面包”。由于美味可口,有的西班牙餐馆或酒吧也出售类似中国小笼包的食物,但被叫做“西班牙产中式夹肉面包”。自从20世纪90年代后,中国移民大量进入西班牙,中国饭店也如雨后春笋般地遍地开花,小笼包是每家饭店必备的主力食品之一。不过那时的小笼包已经不再写成“小笼包”,而是被写成“小龙”。有的写“中国小龙”,有的写“上海小龙”。对于这个“小龙包”,西班牙语的注释更绝:“加中国龙肉的小面包”。至于是谁把“小笼包”改成了“小龙”,记者一时无法考证,由于龙是中国的象征,中国人都是龙的传人,“小龙”、“巨龙”反正说的都是中国人、中国物。有的西班牙餐馆随之进行大胆改革,干脆将“小龙包”解释成:“中国的龙面包”。于是“龙面包”这一名称也就在中西饭店里迅速走红,“龙面包”既好吃又易记,不像其他的中餐名字不易说更不易记。2000年之后,“小龙包”又发生了变化。为纪念武打巨星李小龙对武打电影的杰出贡献,各国电视台纷纷开辟李小龙电影专题。在西班牙,印有李小龙的彩色招贴画大街小巷都能看见,西班牙小孩更是一口一个Bruce lee(李小龙),一口一个中国功夫。也就在此时,“小龙包”的含义又发生变化,有的饭店将“小龙包”解释成“武打巨星李小龙最喜欢吃的中国肉面包”。“小龙包”的西班牙名就叫“Bruce lee”,人们点菜时对跑堂说,“我要Bruce lee”,跑堂就知道食客要的是中国的小笼包。驰名国外,闻名四海,小笼包无疑是小吃中的出名食品了。[2]各地版本上海小笼蒸包常州小笼包现代形式的小笼包起源于清代道光年间的常州府(参考《常州地方志》),古时有万华,近代有迎桂,如今的常州人都知道,吃小笼包要到 “迎桂”(迎桂小包子)。迎桂茶社创建于1911年,由于经营得法,注重质量而使其闻名遐迩,深受市民喜爱。产品具有“皮薄透明、卤汁丰富、蟹香扑鼻、肥而不腻、汁水浓郁、肉馅鲜嫩”的特点。辅以香醋、嫩姜,风味更佳,堪称常州一绝。1985年被评为市优质产品,并编入“江苏省小吃食谱”,1990年被常州市人民政府列为十大名点之一。加蟹小笼包是常州季节性的传统风味小吃,每年中秋节前后,桂花盛开之际上市供应。加蟹小笼包,原来叫加蟹包子。包子,古称“馒头”,常州人亦称其馒头。小笼包又分随号、对镶、加蟹三种。“随号”就是不加蟹油的,“对镶”就是一笼包子有六只是加蟹的,另外六只是不加蟹油的,“加蟹”就是全部加蟹油的。一笼包子又称一客,所以老常州人吃小笼包常常是这样叫的:“两客对镶”。或者:“十客加蟹,我要带到上海去呔。”老吃客堂吃一般只会点“对镶”,老吃客认为:吃加蟹包子只有一只随号、一只加蟹夹花着吃,才能充分体会到蟹的鲜美,如果你总是吃加蟹的,嘴中味觉就会有些迟钝,越来越感觉不到蟹的鲜味了。所以会产生“对镶”这种约定俗成的名称。常州加蟹小笼包皮薄馅大卤多,讲究一个“宁可人等包,不可包等人”。那才能达到最好的口感。应该把小笼包包挟出香醋碟子里浸一下,用筷挟起来,包朝外面侧一点,咬开底部一边的皮子,先小心吸鲜美的卤水,再把开了口的包浸到醋里,让醋进入到包里边,然后把整个包放入嘴中。如果你不先把丰溢的汁水吸掉,就一口咬下去,不是要烫了自己,就是将汁水射得一塌糊涂。无锡小笼包无锡的小笼包以皮薄卤多、口味鲜甜而誉遍沪、宁、杭一带,是无锡传统名点,已有上百年的历史。 它选用上等面粉制作,选料精细,小笼蒸熟,有些鲜甜细腻的江南风味。具有“夹起不破皮,翻身不漏底,一吮满口卤,味鲜不油腻”的特色。无锡小笼包有鲜肉小笼包与蟹粉小笼包两种,鲜肉小笼包的肉馅紧酵皮薄、馅多卤足、鲜嫩味香。

小笼包,别称小笼馒头,在苏南、上海、浙江一带习惯叫做小笼馒头,四川叫做小笼包子,武汉叫做蒸包,一个蒸笼里有10个包子,10个包子为一笼,它源于北宋京城开封的灌汤包,南宋时在江南承传、发展和演变而成。小笼包是常州、无锡、苏州、上海、南京、杭州、宁波、嘉兴、芜湖、徽州、嵊州等江南地区著名的传统小吃。

小笼包的历史可上溯至北宋,尚有类似的“灌汤包子”流传至今。

现代形式的小笼包起源于清代道光年间的常州府,并在各地都形成了各自的特色,如常州味鲜,无锡味甜,苏州味美,但都具有皮薄卤足、鲜香美味等共同特点,并在开封、天津等地也得到了传扬。近代江南小笼包真正成形的历史已很难考证,但普遍认为现代小笼包与北宋时期的“山洞梅花包”和“灌汤包子”有着传承上的渊源关系,在靖康之变后由北宋皇室南迁时带入江南后演变而来,与中国北方地区流行的灌汤包子系出同门,千百年来传承一直没有断绝,并在各地得到了创新和发扬。常州万华茶楼在清代道光年间的“加蟹小笼馒头”,上海南翔镇的黄明贤在1871年创制的“南翔小笼馒头”,包括清代光绪年间流行于无锡惠山秦园一带的无锡民间小笼馒头,及开封、天津等地近代创制的小笼包,都各具特色。江南一带的常州、无锡、苏州、上海、南京、杭州、芜湖等地都有着悠久的小笼包烹饪历史,现存着不少以小笼包为特色的百年老店。

自50多年前有中国移民在西班牙经营中国餐馆开始,中国的小笼包也开始在西班牙食客中享有盛誉。西班牙语菜单上的解释是:“中心加肉的中国面包”。由于美味可口,有的西班牙餐馆或酒吧也出售类似中国小笼包的食物,但被叫做“西班牙产中式夹肉面包”。

自从20世纪90年代后,中国移民大量进入西班牙,中国饭店也如雨后春笋般地遍地开花,小笼包是每家饭店必备的主力食品之一。不过那时的小笼包已经不再写成“小笼包”,而是被写成“小龙”。有的写“中国小龙”,有的写“上海小龙”。对于这个“小龙包”,西班牙语的注释更绝:“加中国龙肉的小面包”。

至于是谁把“小笼包”改成了“小龙”,记者一时无法考证,由于龙是中国的象征,中国人都是龙的传人,“小龙”、“巨龙”反正说的都是中国人、中国物。有的西班牙餐馆随之进行大胆改革,干脆将“小龙包”解释成:“中国的龙面包”。于是“龙面包”这一名称也就在中西饭店里迅速走红,“龙面包”既好吃又易记,不像其他的中餐名字不易说更不易记。

2000年之后,“小龙包”又发生了变化。为纪念武打巨星李小龙对武打电影的杰出贡献,各国电视台纷纷开辟李小龙电影专题。在西班牙,印有李小龙的彩色招贴画大街小巷都能看见,西班牙小孩更是一口一个Bruce lee(李小龙),一口一个中国功夫。也就在此时,“小龙包”的含义又发生变化,有的饭店将“小龙包”解释成“武打巨星李小龙最喜欢吃的中国肉面包”。“小龙包”的西班牙名就叫“Bruce lee”,人们点菜时对跑堂说,“我要Bruce lee”,跑堂就知道食客要的是中国的小笼包。驰名国外,闻名四海,小笼包无疑是小吃中的出名食品了。
