Many people like to eat Fish in Sour Soup.烹饪步骤做法一食材酸汤、西红柿、草鱼、鲢鱼、黑鱼、木姜子油、辣椒、葱、姜、各种时令蔬菜。步骤1.酸汤是用糯米粉发酵,配以贵州当地出产的野生西红柿,经过6种工序慢慢熬制而成。2.在热锅内放入辣椒,炒出香味。3.加入提前酿制好的酸汤。4.将现杀的各种鱼放入锅中,再加上1至2滴贵州当地出产的木姜子油,加热煮沸。5.在锅中放入各种时令蔬菜。做法二食材草鱼1条(约750g),西红柿2个(约300g),土豆1个(约100g),黄豆芽100g,油豆腐(或腐竹)100g,朝天椒(或干辣椒)6个,老姜片3片,蒜茸1汤匙(15g),香菜适量,自制酸汤2碗(500ml),高汤(或水)4碗(1000ml),盐2茶匙(10g),油1汤匙(15ml)。步骤1.草鱼去鳞去鳃处理干净,切成大块;西红柿切块;土豆去皮切片。2.大火加热炒锅中的油,爆香老姜片和朝天椒(或干辣椒),放黄豆芽和土豆片,调入盐煸炒数下。3.加入高汤(或水)和自制酸汤,煮沸后将西红柿块和鱼块放入汤汁中。4.所有材料融合在一起,清新酸香的味道出来后,放油豆腐(或腐竹)再煮几分钟。5.离火前撒上蒜茸和香菜即可。做法三食材草鱼、香菇、青笋、豆腐、姜、大葱、蒜、辣椒、西红柿、红酸汤、糖、盐、胡椒粉、盐、糊辣椒面等。步骤1.鱼去内脏清洗干净,均匀分段。2.姜切片,葱切大段,蒜剥皮,辣椒切片,西红柿切小块。锅中倒入油,六成热时加入葱姜蒜,煸炒出香味,然后加入西红柿煸炒出水分。3.在锅中加入酸汤、清水,放油、糖、鱼块,烧开后将浮沫撇去,加入盐、味精、胡椒粉,煮5分钟左右。锅中最后加入香菇和青笋再小火煮5分钟。4.将姜末、蒜末、香菜末、香葱末放入碗中,加糊辣椒面和盐,舀一勺煮好的酸汤汁水冲入碗中,搅拌均匀即为蘸料。随鱼上桌蘸食。5.捞出大部分的鱼吃完后,可再加入豆腐煮,或再涮制其他青菜。做法四食材鱼、番茄、青辣椒、红辣椒、青蒜、柠檬香茅、鸡汤、料酒、盐、胡椒粉。步骤1.将鱼切成段,然后用厨房用纸把鱼表面的水吸干。2.腌制鱼肉:在鱼片中放入盐、胡椒粉、料酒、蛋清、淀粉、油,腌制十分钟。3.在腌制鱼肉的时间准备蔬菜:把番茄顶部划一个十字,锅中烧开水,把番茄放入水中一烫,再放入凉水中过一遍,番茄的皮可以很轻松地去掉,然后切成小粒。4.把青辣椒、红辣椒、青蒜切小段,把柠檬一切为二,把香茅切薄片。5.锅中加底油煸炒番茄,炒出汤汁以后放入辣椒。6.锅中倒入鸡汤(在家做饭时倒水也可以)。7.水开后加入盐、糖、胡椒粉。8.将鱼片一片一片地放入锅里。9.把柠檬中的柠檬汁挤到锅里,再放入青蒜、魔芋丝、九层塔。
