风鹅扬州风鹅腌制方法非常奇特,煮熟食用,色、香、味俱全,肥而不腻、酥嫩可口,绝对让你过吃不忘。 风鹅即鹅经屠宰后取出内脏,但不去毛,经胳制风干、而制成的一种特殊腌腊鹅制品。 (一)特点 风鹅羽毛丰满艳丽,造型独特,鹅形完整,肉质鲜嫩,腊香浓郁。 (二)选料 制作风鹅选用健康无病、羽毛绚丽、雄壮健美的鹅,其中以公鹅或野鹅最佳。 (三)配方 去脏鹅100公斤,盐5一6公斤,白糖1一1.5公斤,花椒0.1-0.2公斤,五香粉0.1公斤,硝酸钠50克。 (四)加工工艺流程 宰杀放血一去内脏一涂料腌制—风干 (五)加工方法 1.宰杀放血采用口腔刺杀法,尽量放尽血液。 2.去内脏在颈基部、嗉囔正中轻轻划开皮肤(不能伤及肉),取出嗉囔、气管和食管,在肛门处旋割开口,剥离直肠。取出包括肺的全部内脏。特别注意操作卫生,不能把羽毛弄脏弄湿:再用于轻轻将皮、肉分开,以暴露出胸脯肉,腿肉和翅膀肉为度,而颈端、翅端、尾端和腿端的皮肉应相连,不能把撕脱。 3.抹料腌制 把辅料粉碎混匀,涂抹在鹅体腔、口腔、创口和暴露的肌肉表面。然后平放在案板上或倒挂胯制3~4天,不能堆叠,以便保护羽毛。 4.风干用麻绳穿鼻,挂于阴凉干燥处,经半个月左右的风干即为成品。
